Ni Sa Moce Nananu
Unfortunately Nananu Island Lodge will be closing March 7th. Rick and I are sad to say goodbye but it will be turned into an untra-luxury time share resort in the next 5 years or so our little lovely backpackers has got to go.
Rick started here 3 years ago, we met here, were engaged and married here so it obviously holds a lot of unforgetable memories for us. It's been our home away from home since we've been here and the staff and people we've met here will always be in our hearts.
What a beautiful place on earth we've been so fortunate to embrace.
We'll be heading to Manta Ray Island Resort in the meantime. Another gorgeous island AND it's almost manta ray season.

Cookies, a double layer, rolled cookie filled with either raspberry or strawberry jam.
INGREDIENTS:
2-1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shortening
1 cup sugar
1 well-beaten egg
2 tablespoons evaporated milk
1-1/2 teaspoon vanilla
Strawberry or seedless Raspberry Jam
powdered sugar
PREPARATION:
Sift flour, baking powder and salt. Set aside. Cream together shortening and sugar. Add egg, evaporated milk and vanilla. Mix well. Gradually add flour mixture until completely combined. Form into a ball.
Put in an airtight container overnight in the refrigerator.
Preheat oven to 350 degrees F. Roll-out dough and cut-out with a heart-shaped cookie cutter. Bake on lightly greased cookie sheets for 8 to 10 minutes.
When cool, assemble cookies. Place a teaspoon of jam on the bottom of a cookie, then cover with another cookie. The tops of the cookies should be facing outward on both top and bottom. Sprinkle with powdered sugar.
